Brownie Cupcake Recipe

I originally found this brownie cupcake recipe on CD Kitchen. It is a chocolate lovers delight. If you love brownie cupcakes, this is the recipe for you.Some brownie cupcake recipes loosethe brownie consistency. This recipe is just right, not to chewy, but not too much cake. I would suggest tasting this cupcake before icing it. You may find that you want to just powder with brown sugar. I have included a chocolate fudge icing recipe for chocoholics. You can also get creative and add some more chocolate and make your own original brownie cupcake recipe. How about adding a chocolate kiss to the middle of each brownie cupcake just before baking. Fudge Brownie Cupcakes:Yield: 18 cupcakes
Ingredients:
- 1 stick of butter
- 1 ounce of semisweet chocolate (4 squares)
- 1 3/4 cups sugar
- 4 large eggs
- 1 teaspoon vanilla
- 1/2 teaspoon salt
- 1 cup chopped peanuts or walnuts(optional)
Baking Instructions:
- Preheat over to 350 degrees
- Line cupcake tins with paper or foil liners.
- Melt chocolate and butter over low heat, stirring until blended.
- Mix all remaining ingredients, and stir in chocolate and butter mixture.
- Fill cupcakes tins 2/3rds full.
- Bake for 23-26 minutes or until top springs back when touched.
- Cool completely before icing.
Chocolate Fudge Icing
Ingredients:
- 4 cups sugar
- 1 c
- up shortening
- 1 cup heavy whipping cream
- 1/2 cup corn syrup
- 1 teaspoon salt
- 1 ounce semisweet chocolate (2 squares)
- 2 teaspoons vanilla
- Combine sugar, shortening, cream, corn syrup, salt and grate chocolate in saucepan.
- Cook over low heat until chocolate and shortening are well blended, stir continuously.
- Bring to a boil, and continue to boil until all well blended. Take off heat and beat while adding vanilla.
- Continue beating until achieving desired consistency.
