Gumball Cupcakes

A thought, Gumball Cupcakes. It was my friend Terry's birthday. So, for Ms. Bubblegum herself, I decided to make a gourmet gumball cupcake. I wanted a pink and black cupcake theme, so for the basic cupcake recipe, I made vanilla cupcakes with strawberry pudding cupcake filling. I used the Magnolia Vanilla Cupcake Recipe and created my own strawberry pudding cupcakes.

By coincidence, I stumbled upon pink and black gumballs at my favorite store, TJ Maxx. I had some left over liquorice pieces, so between the two I had fab cupcake recipes and decorations. Gourmet Gumball Cupcakes would be the birthday treat. So, I created another addition to the fun cupcake recipes list. A gourmet cupcake recipe can be just about anything you create. You can start with a basic cupcake recipe, and add your own taste.

The best cupcake recipe is usually a pudding cupcake. A chocolate pudding cupcake is always a hit. You can add the pudding directly to the batter, or as a cupcake filling.

The cupcake frosting recipe was fun too. Birthday cupcakes with pink sprinkles pink cupcake icing, and a gumball on top. Gumball Cupcakes, perfect for my BFF. (We won't divulge her real age)

Magnolia Vanilla Cupcake Recipe

Ingredients:

  • 1 1/2 cups self rising flour
  • 1 1/4 cups all purpose flour
  • 1 cup (2 sticks) unsalted butter, softened
  • 2 cups sugar
  • 4 large eggs, room temperature
  • 1 cup milk
  • 1 teasoon vanilla extract

Directions:
  1. Preheat oven to 350 degrees.
  2. Line 24 cupcake tins with paper or foil liners.
  3. Combine the flours in a bowl.
  4. In large bowl, using electric mixer, cream the butter until you get a smooth consistency. Add the sugar, and beat until fluffy.
  5. Add eggs, one at a time. Add flour, milk and vanilla, alternating in parts,and adding gradually.
  6. Continue to beat and blend until well belnded, buty try not to over-beat.
  7. Fill cups 3/4th full.
  8. Bake for 20 to 25 minutes, until an inserted toothpick comes put clean.


Baking tip: Be sure to use the elf rising flour, or your cupcakes will be dense.






Strawberry Pudding Filling

Ingredients:

  • 1 box on Vanilla Instant Pudding or Pie filling
  • 2 tablespoons strawberry jam or jelly

Directions:
  1. Make pudding according to directions on package.
  2. Mix in jam
  3. Chill

Add pudding to cupcakes:
Once cupcakes have cooled, cut a small piece of cake out of the center, add the filling, and place cake piece back on cupcake. You can use an icing bag, or this frosting tool I bought at Home Goods. Or, a small spoon.
Cupcakes are now ready for frosting.


Vanilla Buttercream:
  • 2 sticks unsalted butter
  • 6 to 8 cups of powdered sugar
  • 1/2 cup milk
  • 2 teaspoons vanilla extract

Directions:
  1. Beat the butter, and half of the sugar.
  2. Add milk and vanilla.
  3. Beat until smooth and creamy consistency.
  4. Gradually add the remaining sugar, a little at time until you get an icing consistency.
  5. Add food color for desired coloring. Note: To add food tint, just grab a dab with a toothpick and drop into icing while beating. A small amount of tint goes a long way.
  6. Decorate your cupcake with gumballs, sprinkles or sugar crystals. Create your own desired decoration.
