Iced tea Cupcakes. I was looking thru the pantry for ideas on homemade cupcake recipes. The fridge had Turkey Hill Blueberry Oolong Iced Tea. I looked online, and didn't see a recipe. So, I took a fruit juice cupcake recipe I had from Sandra Lee. I substituted the Oolong and decided to go for it.

These are the best homemade cupcakes. They are so moist, and flavorful.

Hit or miss on the icing too. Snap. I took a can of store icing, and made some additions. Blueberry Oolong cupcakes are so good. I bet they could be even better if made all from scratch.

Blueberry Oolong Iced Tea Cupcakes

Ingredients:

  • 1 box of Betty Crocker vanilla cake mix
  • 1 1/4 cups Blueberry Oolong Tea (Turkey Hill)
  • 1/3 cup vegetable or canola oil

Directions:

    Preheat over to 350 degrees
  1. Line 24 cupcake tins with paper or foil liners
  2. In a large bowl, mix cake mix, Blueberry Oolong tea, and oil.
  3. Fill cups 2/3rd fill.
  4. Bake for 21 to 23 minutes or so, until an inserted toothpick comes out clean.
  5. Cool Completely.

Blueberry Oolong Tea Frosting Recipe:

Ingredients:

  • 1 can Betty Crocker Whipped White Frosting
  • 2 tablespoons of Blueberry Oolong Tea
  • 1/2 cup powdered sugar

Directions:

  1. Add 1 to 2 tablespoons of the Oolong tea to the can of frosting.
  2. If it is a bit watery at first, chill for about 20 minutes.
  3. If still watery, gradually add about 1/2 cup of powdered sugar, and chill the icing for about an hour until it sets to the right consistency for spreading.
  4. Ice your cupcakes as desired.

I added a drop of blue tint and colored sugar and stars for cupcake decoration.



Flavor Hint for the Oolong: We added a shot of blackberry brandy to our tea. It was scrumptious.

I still keep Turkey Hill Blueberry Oolong all summer long...
An old habit;... can't seem to let go of as yet...
