Lemon Ricotta Cupcakes with Blackberry Frosting




Enjoy a healthy snack, with these delicious Lemon Ricotta Cupcakes. The Blackberry Buttercream Frosting makes this cupcake have an unforgetaable flavor combination. Not only is the ricotta healthy for you, so are the blackberries. You would never think these are Ricotta filled cupcakes. I found this recipe online and had to try it. The first time I made these I think I put too much ricotta, so be sure to follow the recipe. Whole milk ricotta will also work, but your Lemon Ricotta Cupcakes will have a lighter consistency if you use the part skim. The blackberries in the frosting make it a pretty purple-blue color. Very tempting. A blackberry on top is healthy and looks decorative, and delicious. Take care to yield the recipe with the blackeberries as well. If you put too many, your frosting will get very dark in color,and the juice from the blackberries, will make the frosting loose and runny.

A flavor variaton: Instead of puttng the blackberries in the frosting, fold them into the cupcake batter before baking. Then dust your cupcakes with powdered sugar or plain vanilla buttercream frosting. Remember to add the blackberry to the top.

Lemon Ricotta Cupcakes


Ingredients

Yield: 18 cupcakes

  • 2 cups part-skim ricotta cheese
  • 1/2 cup sugar
  • 1 egg
  • 1 egg white
  • 3/4 cup cake flour
  • 1 teaspoon baking soda
  • dash of salt
  • 1 lemon, zested


Baking Instructions

  1. Preheat over to 35o degrees
  2. Line cupcake tins with paper or foil liners.
  3. Combine ricotta, sugar, egg,lemon zest, vanilla, flour, baking soda and salt.
  4. Blend until smooth.
  5. Beat the egg white until a soft peak forms
  6. Fold egg white into the batter
  7. Fill cupcake tins 3/4 full.
  8. Bake 18 to 20 minutes until an incerted toothpick comes out clean.
  9. Cool completely.
Blackberry Buttercream Frosting


Ingredients

  • 1/3 cup butter, softened
  • 1 1/2 teaspoons vanilla extract
  • 1 to 2 tablespoons milk
  • 1/4 cup to 1/2 cup blackberries

    Instructions

    1. In a large bowl mix sugar and butter on low speed.
    2. Add vanilla and 1 teaspoon of milk.
    3. Gradually add in the remaining milk until you get a desired frosting consistency
    4. Blend blakcberries by gently mashing with a fork, and gently fold into frosting
    5. place a blackberrie on top of each cupcake if desired for garnish
