Yellow Cupcakes

I got this yellow cupcakes recipe from the Food Network. It is amazingly delicious. The cupcakes come out very moist, and fluffy. The light golden color works well with springtime colors. When I read the reviews, all fellow bakers seemed pleased at their accomplishments. Even when there was a slight mishap, of using medium eggs instead of large, their yellow cupcakes still came great. I recommend using frosting of your choice, and decorating to your liking as well. I'm including a lemonade frosting that I happen to like. I also found some adorable and pretty Easter Cupcakes.

Yellow Cupcake Recipe


Ingredients:

  • 3/4 cup unsalted butter (1/12 sticks at room temperature
  • 1 cup sugar
  • 11/2 cups cake flour,sifted
  • 1/4 teaspoon salt
  • 1/2 cup milk, room temperature
  • 3/4 teaspoon vanilla extract
  • 3 large eggs at room temperature, separated
  • Yield: 12 cupcakes


Directions:

  1. Place rack in middle of over and Preheat to 350 degrees.
  2. Line cupcake tims with paper or foil liners.
  3. Combine butter and sugar, mix on low speed until blended, then raise speed to light and fluffy (mix about 10 minutes).
  4. In a medium bowl, whisk the flour, baking powder and salt.
  5. In a small bowl, whisk together the milk and vanilla.
  6. Add the egg yolks to the creamed butter one at a time.
  7. Reduce speed of the mixer to low.
  8. Add the flour mixture in 3 additions, and the milk in two additions, raising speed to medium until smooth batter is formed.Transfer to large mixing bowl.
  9. In clean bowl, mix egg whites on high speed, using the whisk attachment, until still peaks are formed.
  10. Working in three batches, fold the egg whites into the batter.
  11. Divide batter evenly.
  12. Bake for 30 minutes, or until an inserted toothpick comes out clean.
  13. Cool completely.

Spring Cupcakes


Pink Lemonade Frosting.


Ingredients:

  • 1 8 ounce package of cream cheese
  • 1/2 cup butter (i stick)
  • 3 cups powdered sugar
  • 3 tablespoons thawed pink lemondae concentrate
  • 1 teaspoon lemon zest

Directions:
  1. In large bowl, blend cream cheese abd butter, until light and fluffy.
  2. Add sugar, pink lemonade concentrate, and lemon zest.
  3. Blend with mixer on low speed until sugar is incorporated, about 1 to 2 minutes.
  4. Increase speed to medium until light and fluffy.
Here's an idea: Wrap a cupcake in a pretty celophane bag. During the Easter Egg hunt, whoever finds the cupcake, wins a basketful.
