Fall is here, time to find that creative apple Cupcake Recipe. Lets get ready to start baking.
This is a fruit filled cupcake recipe that is decorated with festivities in mind. I'm sure you may have seen this apple cupcake decoration in a magazine, or on TV. A Martha Stewart's decorating idea. Over the years, I've added and changed the recipe to taste to my own liking. It's apple goodness, bursting with apple cupcake flavor.
This is one of my favorite Thanksgiving Cupcake Recipes. It is more an apple cupcake than a muffin. I bake them bright and early before the turkey goes in. It makes the kitchen fragrant and smelling like cinnamon, toasty warm, and sooooo good.(Who needs candles).
Later on, I frost and decorate the remaining Apple Cupcakes to look like Apples. They add an apple accent to the table.
If you have alot of apples in the kitchen, how about making an
Apple Salad . I think the two together would be a perfect in between snack.
A box of homemade apple cupcakes adds a personal touch to gift giving. Why not bring some along when you are traveling for Thanksgiving.
Apple Cupcake Recipe- 2-1/4 cups of flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon salt
- 1/2 cup unsalted butter
- 1-1/2 cups sugar
- 2 tablespoons brown sugar

| The apples work best shredded through a processor or finely chopped. |
- 2 eggs
- 1 teaspoon vanilla
- 4 cups shredded apples - I prefer MacIntosh, but you can use any kind.
Baking Instructions- Preheat oven to 350 degrees
- Line cupcake tins with paper or foil liners
- In medium bowl mix flour, baking soda, cinnamon, nutmeg, and salt
- In a large bowl mix butter and sugar together until light and fluffy
- Mix in eggs and vanilla, gradually adding flour until all well mixed
- Fold in apples
- Divide batter into 18-22 cups
- Bake for 18 to 20 minutes, until tops spring or an inserted toothpick comes out clean
- Cool cupcakes before frosting and decorating
Vanilla Buttercream Frosting- 1/2 cup unsalted butter
- 4 cups powdered sugar
- 1/2 teaspoon salt
- 1/3 cup milk
- 1 teaspoon vanilla extract
Instructions- Place butter in a bowl and blend with mixer until it becomes a soft, creamy consistency.
- Add remaining ingredients until well blended, and makes frosting consistency.

You can buy fondant or marzipan, and tint a green color, and cut out with a stencil or cookie cutter, and leave it out overnight to mold before placing. --ALSO--Freeze a spearmint fruit leaf or fruit slice for about an hour. Take out of the freezer and slice it to make a thin slice, which will resemble an apple leaf. |

- Tint frosting to a bright red or bright green apple color
- Frost cupcake
- Place a pretzel stick in the middle to resemble an apple stem
- Place two leaves on either side
