Banana Cupcake Recipe

This is an old fashioned banana cupcake recipe. A great pick me up on a cold afternoon. Try it with hot chocolate. Banana cupcakes do the body good.
This recipe is one of my favorites, for two reasons. The first being, I got it from my friend Sue K. She was one of the most admirable people I have ever known. The other, naturally, being amazingly delicious.
This banana cupcake recipe has been passed on for generations, and only gets better with time. This recipe makes 12 banana cupcakes to be shared. Serve it anytime. Even for a breakfast treat.
I enjoy it around holiday time. You can use any flavor frosting you like. Cream cheese frosting or chocolate fudge compliment the banana cupcake recipe nicely.

Banana Cupcake Recipe
Ingredients
- 1 1/2 cups flour
- 3/4 cups of sugar
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup melted butter
- 4 medium mashed bananas-about 11/2 to 2 cuos
- 2 eggs
- 1/2 teaspoon vanilla
Baking Instructions
- Preheat over to 350 degrees
- Fill 12 cupcake tins with paper or foil liners
- In large mixing bowl combine flour,sugar, baking soda, baking powder, and salt.
- Add in the butter, bananas, eggs, and vanilla and mix well with mixer at medium speed,
for approximately 2 minutes
- Fill cupcake tins
- Bake for 25 to 30 minutes. Tiyr banana cupcakes will be done when a toothpick comes out clean.
Cream Cheese Frosting Ingredients

| Try adding some yellow food coloring to the cream cheese frosting. It will add color to your buffet table. |
- 1 package (3 ounces) cream cheese, softened
- 1/3 cup margarine or butter, softened
- 1 teaspoon of vanilla
- 2 cups powdered sugar
Mixing directions:
- Beat cream cheese, margarine and vanilla in medium bowl on low speed until smooth.
- Gradually beat in powdered sugar until smooth and spreadable.
Chocolate sprinkles also make this cupcake appealing and delightful to the palette.
Chocolate Fudge Frosting Ingredients
- 2 one ounce squares of unsweetened chocolate
- 1 can condensed milk
- 1 pinch of salt
- 1 tablespoon of water
- 1/2 teaspoon of vanilla
Mixing directions:
- In a saucepan over medium heat, melt chocolate with condensed milk.
- Add salt
- Cook and stir until chocolate melt and thickens.*note: this may take 5 to 10 minutes
- Remove from heat
- Stir in water, and cool
- Stir in vanilla
