This is the Best Blueberry Muffins Recipe I have ever had. Using fresh blueberries are key in the taste. This is a healthy blueberry muffins recipe. These sweet little berries have anotioxidants.

This recipe makes quick and easy blueberry muffins. However, be sure to fold in the blueberries with a rubber spatula and not over mix them. If you forget and add the blueberreis into the mixer, your muffins will be a shade of blue, that taste dry and flat.

I prefer the large sized muffin. Make this your own homemade recipe, by adding your own variations. You can add add the streusal topping and it will give it a sweeter taste.


Blueberry Muffin Recipe

Ingredients:

  • 3 cups flour
  • 3 cups fresh blueberries
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 4 teaspoons baking powder
  • 1 stick of butter
  • 2 large eggs
  • 1 cup milk
  • 1/2 teaspoon vanilla



Directions:

  1. Preheat over to 350 degress.
  2. Line cupcake tins with foil or paper liners.
  3. Beat eggs, milk, and vanilla. Add baking powder, salt, and sugar, and blend well.
  4. Melt butter, and add to mixture, blending well.
  5. Fold in flour, and blend well, making sure the flour is completely moistened.
  6. Carefully fold in the blueberries, gently, and do not stir the batter , being careful not to over mix.
  7. Fill muffin cups 2/3rd full.
  8. If desired, sprinkle streusel topping on top.
  9. Bake for 23 to 25 minutes, until muffns spring back when touched.
  10. cool completely






Streusel Topping:

  • 1/3 cup brown sugar
  • 1/3 cup flour
  • 2 tablespoons butter
  • 1/2 teasppon cinnamon


Directions:
  1. Let butter sit to room temperature.
  2. Mix all ingredients together.
  3. Sprinkle on top of muffins before baking.
