Cherry Cupcakes





This cherry cupcakes recipe is fruitful and delicious. The perfect cupcake for any summer gathering. It is also great for a pretty in pink party. The fresh fruit tint the batter to make pink cupcakes. I prefer the fresh fruit, however, you can change the recipe up a bit by using maraschino cherries. You can also flavor the icing and tint it pink with juice from the maraschino's too.

There are many flavor variations to try from this recipe. You can add mini chocolate chips, or even mix the berries with half strawberries.

Recipe

Ingredients:

  • 2 cups flour
  • 1/2 stick of butter softened
  • 1/1 cup sugar
  • 2 eggs
  • 2/3 cup fresh cherries, pitted and halved
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder


Directions:

  • Preheat over to 350 degrees
  • Place foil or paper cupcake liners for 24 cupcakes.
  • In mixing bowl,combine sugar, butter, eggs, vanilla, salt and baking powder.
  • Gradually add flour until well mixed.
  • Fold in cherries.
  • Pour into cupcake tins 2/3rd full.
  • Bake for 23 to 26 minutes, until an inserted toothpick comes out clean. *Be sure to angle your toothpick so not to hit a cherry.*
  • Cool completely before icing.

    Cherry Cream Cheese Frosting

    Ingredients:

    •1 8 oz. package cream cheese, softened
    •1 stick of butter
    •1/2 cup finely diced fresh cherries / or 1/2 maraschino cherries.
    •4 cups powdered sugar
    •1 teaspoon vanilla
    •2 to 4 tablespoons of milk, orcherry juice from the marschino jar .

    For a flavor variation: Add a teaspoon of cherry extract to the frosting.

    Directions:

    1.Mix cream cheese, butter, and vanilla.
    2.Add sugar, one cup at a time.
    3.Gently fold in cherries. Continue mixing on low.
    4.Increase speed and begin mixing until fluffy.
    5.Add milk or juice gradually until you get desired frosting consistency.
    6.Garnish and decorate as desired.

    I decorated the cherry cupcake in the photo with edible pearls, and small fondant flowers. You could also drizzle chocolate syrup on top to make a chocolate cherry cupcake. Explore your flavor creativity.
