Chocolate Cupcake with Strawberry Whipped Cream




A chocolate cupcake recipe deliciously decadent, that is perfect for a special Valentine. The strawberry cream filling is romantic, looks pretty, and compliments the chocolate cupcake. Set the mood with a bottle of champagne alongside your cupcakes. Tie with a pretty red bow, and you will be sure to win your Valentine heart. Try a flavor variation or decorate with imagination. A Valentine's cupcake suggestion: Use heart shaped silicone baking cups. After frosting, if your special someone is a chocolate lover, a Hershey's kiss on top looks cute,and is always fun. Chocolate Cupcake Recipe Filled Strawberry Whipped Cream

Rose and Champagne


Ingredients
2 1/2 cups flour
1 2/3 cups sugar
2/3 cup baking cocoa
1/2 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon baking powder
1/4 cup butter
2 eggs
1 1/2 cups water
1 teaspoon vanilla


Directions

1. Preheat over to 350 degrees.
2. Line cupcake tins with paper or foil liners Note: If you use silicone baking cups, line on baking sheet.
3. Mix flour, cocoa, baking powder, baking soda, and salt in a bowl.
4. Beat in butter until smooth, then gradually add sugar and eggs.
5. Beat moist mixture into flour mixture.
6. Gradually add water, and continue beating until smooth
7. Fill cups with better 2/3rds full.
8. Bake for 20 to 30 minutes, or until an inserted toothpick comes out clean.
9. Cool

Yield: Recipe makes 18 cupcakes


To add filling:

After cupcakes cool, cut a circle large enough to add a teaspoon of filling to the middle of cupcake. Add filling, replace top, than frost and decorate top of cupcake.

Strawberry Whiiped Cream


Ingredients

3 pints fresh strawberries (remove stems)
3 tablespoons cherry liquer
1 1/4 cups heavy cream


Directions

1. Puree strawberries in blender or food processor, and strain for seeds.
2. Add liquer to puree.
3. Add sugar and stir until dissolved.
4. Whip cream until stiff and cream becomes a whipped
consistency.
5. Fold the whipped cream into the pureed strawberries.
6. Refrigerate until ready to serve in and on top of
cupcakes.

A flavor idea: After chilling whipped cream, chop fresh strawberries and fold into cream.
