Coffee Cupcakes with Baily's Irish Cream Frosting

I found this recipe for coffee cupcakes online, and altered it a bit to my liking. On St. Patrick's Day a great dessert to bring to the party is Irish Cupcakes. This coffee cupcake is complimented well with Bailey's Irish Cream Frosting. The buttercream frosting keeps well when left out on the dessert table. The semi-sweet chocolate chips add to the flavor. You can get creative, and switch this recipe up a bit. Instead of semi-sweet chip, you could add white chocolate chips to your coffee cupcakes. Or, stick an Andie's mint in the middle of each cup before baking, and you can have chocolate mint coffee cupcakes.

Coffee Cupcakes

Ingredients

  • 1 cup flour
  • 1 tablespoon ground coffee
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon instant coffee
  • 1 teaspoon warm water
  • 1 cup granulated sugar
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla
  • 1 egg
  • 1/2 cup sour cream
  • 1/2 cup semi sweet chocolate chips

Flavor Variation: You can add chocolate or cocoa for a chocolate flavor.


Baking Instructions:

  1. Preheat over to 350 degrees
  2. Line 12 cupcake tins with paper or foil liners
  3. In a small bowl, mix flour, baking powder, baking soda, salt, cinnamon and ground coffee.
  4. In another small bowl, mix instant coffee and water
  5. In another large bowl, blend sugar, oil, and egg,
    until smooth. Mix in instant coffee and vanilla.
  6. Gradually blend in flour mixture and sour cream
    combining all thouroughly, and fold in chocolate chips.
  7. Pour batter into cupcake tins, making 2/3rds full.
  8. Bake for 20-23 minutes until cupcakes lightly spring back when touched.
  9. Cool completely before icing.



Bailey's Irish Buttercream Frosting

Ingredients

  • 1 stick unsalted butter, softened to romm temperature
  • 3 cups powdered sugar
  • 2 tablespoos Bailey's Irish Cream


Directions

  1. Cream butter with beater until fluffy.
  2. Add Bailey's and blend.
  3. Gradually add powdered sugar until well blended, and
    has frosting consistency.
  4. Refrigerate until ready to use.
Flavor variation:
Substitute the Bailey's for Kahlua. Makes a great coffee flavored buttercream.
