Easy Pumpkin Cream Cheese Filled Cupcakes

Easy Pumpkin Cream Cheese Filled Cupcakes

The holidays are busy for everyone yet we still want to make yummy desserts for our families and friends. Take it easy and make these quick, easy and delicious Easy Pumpkin Cream Cheese Filled Cupcakes. It's quite a crowd pleaser! Tastes like a pumpkin roll without all the hassle!

Cupcake Ingredients:


  • 1 package spice cake
  • 1 (15 oz.) canned pumpkin
  • 2 eggs

Cream Cheese Filling:

  • 1 (8oz.) cream cheese
  • 1/4 C butter
  • 1 C powdered sugar
  • 1 teaspoon vanilla extract

Cupcake Instructions:

  1. Preheat Oven to 350 F
  2. Mix spice cake, pumpkin and eggs well until thoroughly blended.
  3. Fill a prepared cupcake pan with batter.
  4. Bake for 15-20 minutes or until a toothpick comes out clean.
  5. While cupcakes are baking, bring cream cheese and butter to room temperature.
  6. Cream butter and cream cheese until well blended.
  7. Add in vanilla extract and mix.
  8. Slowly add in powered sugar and mix until well blended.
  9. Fill cake decorator bag with cream cheese filling and attach a cake decorator tip. The dot tip works best.
  10. Once cupcakes have cooled, take one and turn it upside down then insert the cake tip in the middle and squeeze until cupcake is filled.
  11. You may frost cupcakes with butter cream frosting or sprinkle with powdered sugar. Then you may sprinkle a bit of nutmeg on top for an added touch.
