Guinness Cupcakes with Bailey's Irish Cream Frosting

Guinness cupcakes, chocolate cupcakes with stout beer. A cupcake recipe for St. Patricks Day. Bailey's Irish Cream frosting compliments well. Or, for a variation, a Bailey's Chocolate Ganache filling. This is a hit for any party. The Guinness beer, and the Chocolate Cupcake together is flavorful. The Stout beer taste definitely needs the sweet filling, or sweet icing, but if you like a beer taste, I would recommend trying a Guinness cupcake plain before frosting. You may decide you just would like some powdered sugar sprinkled on top. Guinness cupcakes are delicious Irish cupcakes for a St.Patrick's Day treat.

Guiness Chocolate Cupakes with Baileys Irish Cream Frosting

Yield: 24 cupcake


Ingredients:

  • 1 cup Guinness stour beer
  • 2 sticks unsalted butter
  • 3/4 cup unsweetened cocao
  • 2 cups flour
  • 2 cuocs sugar
  • 1 1/2 teaspoons baking soda
  • 3/4 teaspoons salt
  • 2 large eggs
  • 2/3 cup sour cream

Baking Instructionsirections:

  1. Preheat over to 350 degrees.
  2. Line cupcake tins with paper or foil liners.
  3. Combine beer and butter ina medium saucepan cooking over high heat.
  4. Add cocao and whisk until smooth.
  5. Remove from heat and let cool.
  6. In large bowl, combine flour, sugar, baking soda, and salt.
  7. In separate bowl, beat eggs and sour cream.
  8. Add in beer mixture.
  9. Mix all ingredients together until well blended,
  10. Pour into cupcake tins 2/3rds full.
  11. Bake 15 to 18 minutes until an inserted toothpick comes out clean.
  12. Cool completely.

Variaton: Add a ganche filling:
Bailey's Chocolate Ganache Filling:

Ingredients:

  • 8 ounces bittersweet choclate, finely chopped
  • 2/3rds cup heavy cream
  • 2 tablespoons butter
  • 2 teaspoons Bailey's Irish cream

Directions:

  1. Place chocolate in a bowl that can take heat.
  2. Heat cream in saucepan until simmering, than pour over chocolate, stir until smooth.
  3. Add butter and Bailey's and blend well.
  4. Let cool and place in pastry bag.
  5. Cut small cone out of the middle of cupcake, and add filling
  6. Replace cone and frost, or dust with powdered sugar.
Bailey's Cream Cheese Frosting


Ingredients

  • 8 ounces of cream cheese cream cheese, softened.
  • 1/4 cup butter, softened.
  • 3 cups powdered sugar.
  • 3-4 tablespoons of Bailey's Irish cream.
Directions:
  1. Beat cream cheese, butter,and Bailey's in medium bowl on low speed until smooth.
  2. Gradually beat in powdered sugar until smooth and spreadable.
