Lemon Lime Cupcakes


A recipe idea, lemon lime cupcakes. I was going to a party and wanted to bring birthday cupcakes. I started looking around my kitchen, and in my cupcake supplies basket. Decided I would create a new cupcake recipe.
A thought, I would come to the party with a new gourmet cupcake recipe for everyone. I could make a lemon cupcake, lemon cream cupcakes, or use both fruits, and make lemon lime cupcakes.
It was hit or miss, but the finished product was the best cupcake recipe. Its always fun when you experiment, especially when its a hit.
I had my cupcakes arranged in a basket, along with some of the lemons and limes. I was just going to place the basket on the table.
At the party, the hostess had a cupcake stand waiting for me. I put the lemons and limes on the stand too. They looked great. Wish I took a photo.
It's a given now.
In my world, I come with cupcakes.
Lemon Lime Cupcakes Recipe
Ingredients:
- 2 cups cake flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 1/4 cups butter milk
- 4 egg whites
- 1 cup of sugar
- 1 tablespoon lemon zest
- 1 tablespoon lime zest
- 1 tablespoon lemon juice
- 1 tablespoon lime juice
- 1 teaspoon vanilla extract
- 1 stick unsalted butter
Baking Directions:
- Yield: 18 large cupcakes.
- Preheat over to 350 degrees.
- Line cupcake tins with paper or foil liners.
- In a large bowl, mix flour, baking powder and salt.
- In a small bowl, mix buttermilk and egg whites until blended.
- In a medium mixing bowl, mix sugar and butter until well blended. Add in lemon and lime zest, and vanilla. Beat for about one minute longer, and add in lemon and lime juice.
- Add the milk mixture and sugar mixture to the flour bowl, alternating, and beat until all well blended. For approximately 2-3 minutes more.
- Fill cupcake tins 2/3rds full.
- Bake for 18 to 22 minutes. Until an inserted toothpick comes out clean.
- Cool completely.
Cupcake Variations:
- Add lemon curd to the middle of the cupcakes.
- Add some lemon pudding to middle of the cupcakes.
Lemon Lime Buttercream Icing
Ingredients:
- 2 sticks butter - room temperature
- 4 cups confectioners sugar
- 1/2 tablespoon lemon zest
- 1/2 tablespoon lime zest
- 1 teaspoon lemon juice
- 1 teaspoon lime jucie
Directions:
- Mix lemon and lime juice in a bowl.
- Blend butter, and vanilla. Add zest and blend.
- Add confectoners sugar, one cup at a time.
- Gradually add lemon and lime juci mixture, and continue beating until you get desired consistency.
- Frost your cupcakes, and decorate as desired.
