Orange Cream Cupcakes with Tangy Orange Frosting

Orange Cream Cupcakes RecipeIngredients
- 3 medium size oranges
- 3 eggs
- 1/2 cup buttermilk
- 1 teaspoon vanilla
- 1 teaspoon orange extract
- 2 cups sugar
- 1 cup vegetable oil
- 3 cups flour
- 1 teaspoon baking soda
- 2 teaspoons baking powder
- 3/4 teaspoon salt
Baking Instructions
- Preheat over to 350 degrees
- Fill cupcake tins with paper or foil liners.
- Peel oranges and pure in food procesor or blender- being sure to remove all seeds, and reserve 1/2 cup
- In large bowl combne remaining puree, eggs, buttermilk, vanilla, orange extract, sugar, and vegetable oil.
- Gradually mix in the four combination beating on low speed, until blended.
- Fill cupcake tins 2/3rds full.
- Bake 20-23 minutes, until an inserted toothpick comes out clean.
- Cool completely

| Even though you are using liners, lightly grease the edge and top rim around the cup in your baking tin. This will prevent the sides of your cupcake from sticking, and prevent burn marks on your cupcakes from any spillage. |
Tangy Orange Frosting
Ingredients
- 1 cup butter at room temperature
- 8 cups powdered sugar
- 1/2 teaspoon vanilla
- 1/2 teaspoon orange extract
- 1/4 cup orange juice squeezed from fresh oranges
Directions
- Beat the butter at a high speed until creamy.
- Add sugar gradually, add vanilla, orange extract, and orange juice.
- Continue beating until all combines and continue adding sugar until you have a frosting, spreading consistency.
