Oreo Cupcakes with Cookies and Cream Icing

Nothing is as good as Oreo cupcakes and milk. MMMM. A great after school, after work, or before bedtime treat. I enjoy making this cupcake. It is rich and satisfying. You instantly get that flavorful bite of the cookies and cream.
Everyone knows at least one person, who loves an Oreo cookie.
An Oreo cupcake is even better. They are a combination that makes you think of cookies and cream. Remember to come back to my website when its their birthday time.

Oreo Cupcakes RecipeCupcake Ingredients
- 1 stick of butter
- 1 cup milk
- 2 teaspoons vanilla extract
- 2 1/4 cup baking powder
- 1/2 teaspoon salt
- 3 egg whites
- 1 2/3 cups sugar
- 24 Oreo cookies
Cupcake Baking Directions
- Preheat over to 350 degrees
- Line 24 cupcake tins with paper or foil liners
- Mix the salt, baking powder and flour in a bowl
- Separate the Oreos and place one half in the bottom of each cup, icing side up
- Crush the remaining 12 cookie halves and save
- In a large bowl beat the butter, milk and vanilla, until it becomes a creamy consistency
- Gradually add the flour mixture to the butter until it is well blended. Beat slow for one minute, and than increase speed to high for two minutes
- Add egg whites and beat on high until well blended
- Fold in the cookie crumbs
- Pour into cupcake tins 2/3rds full
- Bake for 18 to 20 minutes until an inserted toothpick comes out clean
- Cool completely

Oreo Cupcake Cream Icing Ingredients
- 1 stick of butter
- 1 3/4 cup powdered sugar
- 1 pinch of salt
- 1/3 cup whipping cream
- 1/2 teaspoon vanilla extract
- Remaining Oreo cookie crumbs
Cream Icing Directions
- Mix powdered sugar, salt and butter together until creamy consistency.
- Add whipping cream, and vanilla. Mix on high speed until fluffy.
- Fold in cookie crumbs
