Peach Cupcakes with Peach Buttercream Frosting

It's summertime. Peach Cupcakes; what could be better. My neighbor was going on vacation, so she surprised me with sharing her fruit, and I received a basket of beautiful fresh peaches. I had been thinking about making peach cupcakes all summer, so this was going to be fun.

I found a great recipe online for Vanilla Cupcakes with fresh peaches. I tweaked it a bit to my liking, and these cupcakes came out amazing. They are so moist and flavorful. The fragrance combination of the fresh baked cupcake and peaches is permeating the kitchen with enchantment.

The Peach Buttercream Frosting Recipe calls for fresh peach puree. It is just the right flavor, not to sweet, and very peachy.

Follow these recipes precisley and you will be very satisfied.

Peach Cupcakes

This recipe makes 18 cupcakes.

Ingredients:

  • 2 large peaches
  • 1 3/4 cups cake flour
  • 1 1/4 cups all purpose flour
  • 2 cups granulated sugar
  • 1 tablespoon bakling poder
  • 2/4 teaspoon salt
  • 1 1/2 sticks butter - room temperature
  • 4 large eggs
  • 1/2 cup whole milk
  • 1/2 cup butter milk
  • 1 1/2 teaspoons vanilla


Directions:
  1. Preheat over to 325 degrees
  2. Line cupcake tins with paper or foil liners.
  3. Remove skin from peaches, and finely chop
  4. Combine flours, sugar, salt, and baking powder.
  5. Mix in butter
  6. Blend eggs, milk, buttermilk, and vanilla with a fork.
  7. Gradually add milk mixture to flour mixture, and beat on low speed until all incorpated.
  8. Gently fold in peaches.
  9. Fill cupcake tins 2/3rd full.
  10. Bake for 15 to 20 minutes. Until an inserted toothpick comes out clean.
  11. Cool completely.

Note: I have a gas oven, and I baked my cupcakes for 17 minutes.



Peach Buttercream Frosting

This recipe will generously frost 18 to 24 cupcakes.

Ingredients:

  • 1 large peach, pureed - about 3/4 of a cup
  • 1 stick of butter - room temperature
  • 1 large package of powdered sugar -32 oz. bag

    Directions:
    1. Remove skin from peach and chop, place in blender to puree.
    2. Whip butter until creamy.
    3. Add powdered sugar and puree to butter mixture gradually, alternating until you get a spreading consistency.
