Peanut Butter Cupcakes




Peanut Butter Cupcakes have nutritional value. These Reeses peanut butter cup cupcakes are a hit for chocolate and peanut butter lovers. Eaten plain, or with fluffy peanut butter frosting.

Garnish and decorate as desired with sprinkles. I like garnishing with a few Reese's Pieces.

This is the best peanut butter cupcake recipe.

Ingredients


  • 1/3 cup shortening
  • 1/3 cup peanut butter
  • 1 1/4 cups brown sugar - preferably packed
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 3/4 cup flour
  • 1 3/4 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup milk
  • 16 Reeses miniature peanut butter cups


Directions:
  1. Preheat over to 350 degrees.
  2. Line 16 cupcake tins with paper or foil liners.
  3. In a large bowl, cream the shortening, peanut butter and brown sugar until light and fluffy.
  4. Add eggs, one at a time.
  5. Add vanilla
  6. Add the flour, baking powder, and salt. Combine gradually adding the milk, and continue beating until all blended to a batter consistency.
  7. Fill cupcake tins 1/4 full
  8. Place a peanut butter cup into the center until the top is even with the top of the batter.
  9. Bake for 20 to 22 minutes. To test, insert a toothpick on an angle to see if it comes out clean.
  10. Cool completely.
  11. Serve plain, or with frosting.

    Peanut butter Frosting
    Ingredients:
    • 1/2 cup softened butter
    • 1 cup creamy peanut butter
    • 3 tablespoons milk, more or less as needed
    • 2 cups confectioners sugar


    Directions:
    1. Beat the butter and peanut butter until creamy.
    2. Gradually add the sugar.
    3. Mix while incorporating milk, one tablespoon at a time, until you get a spreading consistency.
    4. Continue beating for fluffy consistency.


    For a variety: You can make half the batch of these Peanut butter cupakes by leaving out the Reese peanut butter cups.These easy peanut butter cupcakes satisfy everyone
