Peanut Butter Cupcakes

Peanut Butter Cupcakes have nutritional value. These Reeses peanut butter cup cupcakes are a hit for chocolate and peanut butter lovers. Eaten plain, or with fluffy peanut butter frosting.
Garnish and decorate as desired with sprinkles. I like garnishing with a few Reese's Pieces.

Ingredients
- 1/3 cup shortening
- 1/3 cup peanut butter
- 1 1/4 cups brown sugar - preferably packed
- 2 eggs
- 1 teaspoon vanilla extract
- 1 3/4 cup flour
- 1 3/4 teaspoons baking powder
- 1 teaspoon salt
- 1 cup milk
- 16 Reeses miniature peanut butter cups
Directions:
- Preheat over to 350 degrees.
- Line 16 cupcake tins with paper or foil liners.
- In a large bowl, cream the shortening, peanut butter and brown sugar until light and fluffy.
- Add eggs, one at a time.
- Add vanilla
- Add the flour, baking powder, and salt. Combine gradually adding the milk, and continue beating until all blended to a batter consistency.
- Fill cupcake tins 1/4 full
- Place a peanut butter cup into the center until the top is even with the top of the batter.
- Bake for 20 to 22 minutes. To test, insert a toothpick on an angle to see if it comes out clean.
- Cool completely.
- Serve plain, or with frosting.
Peanut butter Frosting
Ingredients:
- 1/2 cup softened butter
- 1 cup creamy peanut butter
- 3 tablespoons milk, more or less as needed
- 2 cups confectioners sugar
Directions:
- Beat the butter and peanut butter until creamy.
- Gradually add the sugar.
- Mix while incorporating milk, one tablespoon at a time, until you get a spreading consistency.
- Continue beating for fluffy consistency.
For a variety: You can make half the batch of these Peanut butter cupakes by leaving out the Reese peanut butter cups.These easy peanut butter cupcakes satisfy everyone
