Pink Lemonade Cupcakes

Pink Lemonade Cupcakes are so pretty in pink and delicious. Summer cupcakes. The first thing I think of in summer is lemonade. Lemonade cupcakes are tangy, moist, and fluffy. Not too sweet, and have a citrus summertime flavor. The perfect take along for a picnic, barbercue,or day at the beach. Great for a summer afternoon.

This pink lemonade cupcake recipe is flavorful. The first bite has a strong lemonade flavor. You may find the taste a bit tart. If a sweeter taste is desired, add a few tablespoons of sugar, or try using only half the zest.

I suggest adding food color, and making the cupcake and the icing pink. Another idea, is bake the cupcakes pink, and color the icing yellow. Pink lemomade cupcakes with a pretty color combination. Or, just make lemonade cupcakes. Use lemonade concentrate instead, and eliminate the pink. I'm going to try baking this recipe and adding some flavor combinations. Perhaps I'll squeeze in some lime juice. I like using cream chesse frosting for this cupcake recipe. Again, if a sweeter taste is desired, you may want to try buttercream frosting. Or, a layer of frosting and than a fondant topping. Do yo have any ideas? I would love to hear them.

Pink Lemonade Cupcakes

Yield: 12 cupcakes



Ingredients

  • 1 cupp flour
  • 1/2 teaspoon baking powder
  • 1/4 teasppon baking soda
  • zest frm two lemons
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 2 egg whites
  • pinch of salt
  • 2 egg whites
  • 1/3 cup thawed frozen pink lemonade concentrate
  • 1/4 cup buttermilk
  • red food color


Directions
  1. Preheat over to 350 degrees
  2. Line cupcake tins with paper or foil liners
  3. In small bowl, combine flour, baking powder, baking soda, lemons zest,and salt.
  4. In large bowl, mix sugar, oil, egg whites, and concentrate.
  5. Gradually blend in flour mixture, and buttermilk, beating until smooth.
  6. Add food color to batter to desired shade of pink
  7. Fill cups 2/3rds full.
  8. Bake 20-22 minutes until an inserted toothpick comes out clean.
  9. Cool completely.
Cream Cheese Frosting

Ingredients

  • 1 package (3 ounces) cream cheese, softened
  • 1/3 cup margarine or butter, softened
  • 1 teaspoon of vanilla
  • 2 cups powdered sugar

Mixing Directions

  1. Beat cream cheese, margarine and vanilla in medium bowl on low speed until smooth.
  2. Gradually beat in powdered sugar until smooth and spreadable.
  3. Color and decorate as desired.
