Princess Cupcakes

Pink Princess Cupcakes

These Princess Cupcakes are absolutely precious. The cupcakes in this photo are chocolate sponge cupcakes, made with free range eggs and Green and Black Organic Cocoa.

I am including a chocolate sponge recipe for chocolate lovers. If you want to use a box mix for your cupcakes,I would suggest a Funfetti, or pink cake mix. Little Girls love pink cupcakes.

Any pink icing will work. A sugar cookie cut out with pink sugar crystals works as a topper for your Princess Cupcake. Or, you may want to get edible sugar toppers instead. I love the cupcake stand. It makes a great centerpiece for your birthday table. The pink liners are so pretty in pink too.

Chocolate Sponge Cupcakes

Ingredients

  • 1 1/2 cups of flour
  • 1/2 cup cocoa powder
  • 3/4 stick unsalted butter
  • 1 tablespoon vanilla extract
  • 1 1/4 cups of sugar
  • 5 large eggs
  • 5 large egg yolks

Baking Instructions:
Yield: 18 cupcakes
  1. Heat over to 375 degrees.
  2. Line cupcakes tins with paper or foil liners.
  3. Combine and sift flour and cocoa powder together.
  4. Melt butter, than add vanilla to butter and let cool.
  5. ombine sugar, eggs, and egg yolks, and whisk, warming over a steamed pot of water.
  6. After mixture warms, whip with beater to a foam conistency.
  7. Fold flour into egg mixture, then add in butter.
  8. Fill cupcake tins 2/3rd full.
  9. Bake for 18 to 20 minutes, until inserted toothpick comes out clean.
  10. Cool completely.

Vanilla Buttercream Frosting

  • 1/2 cup unsalted butter
  • 4 cups powdered sugar
  • 1/2 teaspoon salt
  • 1/3 cup milk
  • 1 teaspoon vanilla


Instructions:

  1. Place butter in a bowl and blend with mixer until it becomes a soft, creamy consistency.
  2. Add remaining ingredients until well blended, and makes frosting consistency.
Party Suggestion:
Accompany these cupcakes with a Princess Cupcake Cake.
