Pumpkin Chocolat Chip Muffins

A great pumpkin chocolate chip muffins recipe for Thanksgiving morning. Or a midnight treat. Everyone loves muffins. So why not make a pumpkin muffin recipe.

Muffins are so delicious and appealing, even to kids. You can frost some for the sweet tooth, or leave unfrosted, with some cinnamon or powdered sugar on side.

Make a variation with this pumpkin muffins recipe, by leaving out the chocolate chips.

Or, do half and half. You can make the pumpkin chocolate chip muffins recipe, pour half the batter, and than add the chocolate chips.

Pumpkin Chocolate Chip Muffins Recipe

This recipe makes 12 muffins

Muffin Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon salt
  • 1/2 teaspoon allspice
  • 1 egg
  • 3/4 cup brown sugar
  • 3/4 cup canned pumpkin
  • 2/3 cup buttermilk
  • 3 tablesppons butter
  • 1 teaspoon vanilla extract
  • 1/2 cup milk chocolate or semi sweet chocolate chips (depends on your liking, the milk chocolate will be sweeter)

Baking Instructions

  1. Preheat oven to 375 degrees
  2. Line cupcake tins with paper or foil liners
  3. Combine dry ingredients in a medium bowl, and mix together.
  4. Combine egg, brown sugar, pumpkin, milk, butter and vanilla in a large bowl
  5. Gradually add wet mixture to dry mixture, until blended.
  6. Fill cups 2/3rds full.
  7. Bake for 18 -22 minutes until an inserted toothpick comes out clean

If made the night before, warm before serving. Cover muffins with foil and warm in a 325 degree over for about 10 minutes.

Topping ideas

Frost or top with the following:

• Cream cheese frosting
• Powdered sugar
• Cinnamon and sugar
• Dab of butter
• Butter cream frosting
• Butter mixed with cinnamon and sugar• Chocolate, colored sprinkles or sugar crystals

For fun, I would arrange small bowls of all on a tray and let guests top their own muffin.
