Red Velvet Cupcakes with Peppermint

Thinking about Christmas Cupcakes. Try this red velvet cupcake recipe. The rich red color adds to the holiday spirit. I have tried several red velvet cupcake recipes, and this one is adapted from Paula Dean. Don't you just love Paula. I've tried many of her recipes, and they are incredible.

What's great about red velvet cupcakes, is that any frosting works. The cream cheese frosting below is great tasting. I've added some white chocolate to it. Amazingly luscious. I suggest tinting your frosting with holiday colors.

If you decide on baking red velvet cupcakes, I would bake them and frost with a combination. Another Christmas Cupcake flavor variation is peppermint frosting.

Andes Candies makes a baking chip that is ground up peppermint. You can bake with it, or add it to the frosting. It is simple, and looks decorative. Also, the best part is that is has a Christmas candy cane flavor. Try some decorating variations. Get elaborate with gel and sprinkles, or simply place a chocolate kiss on top. 'Tis the season.

Think red and green. - Gumdrops, Andie's Candies, Spearmint leafs, a thin mint, a peanut butter cup. How about mini marshmallow with frosting spray.

Red Velvet Cupcake Recipe

Red Velvet Cupcake Rack Cupcake Ingredients
  • 2 1/2 cups flour
  • 1 1/2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk
  • 2 large eggs
  • 1 teaspoon white vinegar
  • 2 teaspoons red food coloring
  • 1 teaspoon vanilla extract

Baking Instructions

  1. Preheat oven to 350 degrees
  2. Line cupcake tins with foil or paper liners
  3. In a medium bowl, mix flour, sugar, baking soda, salt, and cocoa powder
  4. In a large bowl combine the oil, buttermilk, egg, food coloing, vinegar, and vanilla.
  5. Beat for approximately 2 minutes, until well blended.
  6. Add the flour mixture to the batter mixture until smooth.
  7. Pour into cupcake tins, 2/3rds full.
  8. Bake for 20-22 minutes until inserted toothpick comes out clean.
  9. Cool completely.


Cream Cheese Frosting Ingredients

  • 1 package (3 ounces) cream cheese, softened
  • 1/3 cup margarine or butter, softened
  • 1 teaspoon of vanilla
  • 2 cups powdered sugar

Mixing directions:

  • Beat cream cheese, margarine and vanilla in medium bowl on low speed until smooth.
  • Over double boiler melt 1/2 cup white chocolate mini morsels, and stir into frosting.
  • Gradually beat in powdered sugar until smooth and spreadable.

Flavor variations to icing:

  • Once frosting is prepared, mix icing with one cup of Andie's crushed peppermints
  • Add 1 teaspoon of mint extract to frosting
  • Add 1 tablespoon of cinnamon to the frosting
