Root Beer Cupcakes

Root Beer Cupcakes are so flavorful. This cupcake is so good, you can add it to your gourmet cupcake recipes. They taste a bit like a bite of yellow cupcakes with a sip of root beer.
I like frosting them with choclate root beer frosting. I found a recipe on JustJENNrecipes, and than modified it a bit, to my liking. I think a chocolate dipped pretzel to the top makes a finished delicious baking with a happing ending.
You can make your own gourmet cupcake recipe. Be creative, you can cut out a circle in the middle and add a small scoop of ice cream, and make Root Beer Float Cupcakes. Or, add some cocoa, or chocolate chips, and make a Chocolate Root Beer Cupcake.

Root Beer Cupcakes Recipe
Ingredients:
- 2 cups of flour
- 1 cup of sugar
- 1 tablespoon baking soda
- 1 teaspoon salt
- 1 12 ounce bottle of root beer
- 2 large eggs
- 6 egg whites
- 2 sticks of butter
- 1 teaspoons vanilla
- Yield: 12 cupcakes
Directions:
- Preheat over to 350 degrees.
- Line cupcake tins with 12 paper or foil liners.
- Mix flour, baking powder, and salt.
- Beat the butter and sugar together until fluffy.
- Beat in vanilla, egg white, eggs, until fluffy.
- Gradually add the flour and root beer, alternating the two.
- Continue beating until blended.
- Pour into cupcake tins.
- Bake for 25 to 30 minutes, until an inserted toothpick comes out clean.
- Cool completely.
Chocolate Root Beer Frosting
Ingredients:
- 2 1/1 ounces of bittersweet chocolate
- 1 stick of butter
- 2/3 cup cocoa powder
- 1/2 teaspoon salt
- 6 tablespoons root beer
- 2 to 2 1/2 cups powdered sugar
Directions:
- Beat butter and cocoa powder and salt until well blended.
- Melt chocolate and blend.
- Add powdered sugar and root beer, alternating , and continue beating until you get desired consistency.
Chocolate Covered Pretzels
Ingredients:
- A bag of pretzels
- A bag of chocolate chips or melting chocolate - desired flavor
- Wax paper
- Sprinkles- if desired
Directions:
- Melt choclate in the micro-wave for approximately 40 seconds, or melt in double boiler.
- Dip pretzels in chocolate.
- Place on wax paper.
- If you want sprinlkles, quickly sprinkles on sprinkles before chocolate firms.
- Once firmed, peel from wax paper.
Variation: Melt a colored chocolate ie: blue, pink etc, and drizzle on top of chocolate covered pretzel for another decorate and appealing look.
