Semolina Cupcake Recipe

The semolina cupcake recipe is the Thanksgiving Cupcake Contest winner of 2009. The picture does not do this recipe justice. A really healthy choice and a sweet delight. Yes, you can say sweet and healthy in the same sentence!
Semolina Cupcake Ingredients- Semolina 1 cup
- Eggs 2
- Milk 3/4 cup
- Baking powder 1tsp
- Pineapple Essence 1/2 tsp
- Powdered sugar/Brown sugar 1/2 cup
- Cinnamon powder 2 pinches
- Cashew nuts chopped 3 tbsp
- Raisins 3tbsp
- Canned pineapple chopped 3tbsp
- Cream(whipped) for topping.
Baking Instructions
In a blender, mix together semolina, eggs, milk, sugar, essence, cinnamon powder and baking powder. Pour it into greased cup cake casings, sprinkle cashew nuts and raisins on the top and steam cook or bake it till done. It takes around 20 minutes at 180deg Celsius. Whip up the cream and add the chopped pineapple before topping it on the cupcakes.
