Turkey Cupcake Recipe for Thanksgiving

Thanksgiving Turkey Cupcake with Gummy Candy and Coconut

This is a festive turkey cupcake recipe, which was adapted from a Martha Stewart recipe, who happens to be one of my idols. It's deliciously similar to a pumpkin cupcake recipe.

Thanksgiving cupcake Thanksgiving Cupcake recipes to go a long way. If you are staying home, you can make them a day ahead of time. Keep them in a container on the table or counter top. As your family and guests arrive and go, they can be taken out one or two at a time.

The turkey cupcake recipe will be enjoyed by the adults, and children will love the turkey cupcake decoration . If you have any left over, place them on the dessert table. What more to be thankful for! The turkey cupcakes recipe is a delicious pumpkin, chocolate, coconut, marshmallow treat. Gobble. Gobble.


Turkey Cupcake Recipe

Ingredients

  • 2 cups of flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1 teaspoon salt
  • 1 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 4 eggs lightly beaten
  • 1 cup light brown sugar
  • 1 cup sugar
  • 2 cups pumpkin puree - (1 15 oz. can)
  • 1 cup unsalted butter, melted and cooled

Baking Instructions

  1. Preheat oven to 350 degrees. Line cupcake tins with paper or foil liners.
  2. Mix flour, baking powder, baking soda, cinnamon, allspice, salt, ginger and nutmeg.
  3. In a large bowl, whisk brown sugar, sugar, butter and eggs.
  4. Add dry ingredients, and whisk all together until well blended. Then mix in pumpkin puree.
  5. Fill cupcake tins about halfway (makes approximately 18 cupcakes).
  6. Bake for 20 to 25 minutes until the tops spring back when touched.
  7. Remove from cupcake tins and cool.

Thanksgiving Turkey Cupcake with Swedish Fish

Chocolate Buttercream

Ingredients

  • 6 sticks of butter, softened
  • 1 pound confectioners sugar, sifted
  • 1-1/2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 5 tablespoons semisweet chocolate chips, melted and cooled

Directions

  1. With an electric mixer or beater, combine the butter, sugar, vanilla and salt.
  2. Begin beating at low speed, increasing to high speed for two minutes until well blended.
  3. Add in chocolate and blend.


Decorate a Turkey Cupcake

Ingredients

  • 1 cup shredded sweetened coconut
  • 18 toasted coconut covered marshmallows (your grocery store should have these)
  • chocolate sprinkles
  • 90 mini gummy fish or similar shaped candies to resemble turkey feathers

Instructions

Decorating Hints
If you can't find the coconut covered marshmallow, lightly frost a white marshmallow with finely shredded toasted coconut. You may have to substitute the eye decoration for a small candy piece or licorice.
  1. Toast coconut. Spread coconut on a baking sheet. Bake until just beginning to brown.
  2. (watch closely, you may have to stir occasionally). It should take about 7 to 8 minutes. Allow to cool
  3. Spread cupcakes with icing, and dip in coconut.
  4. To make the turkey head, wet a toothpick and make two eye holes on your marshmallow. Fill the holes with chocolatesprinkles to resemble eyes. Cut a small piece of rectangle from a gummy fish to make the beak.
  5. Decorating Hints
    To place the gummy fish easily, make a small knife slit before placing into cupcake.
  6. Attach to the cupcake by adding a small dab of icing to the bottom of the marshmallow and attach to the cupcake
  7. Across from the head, insert four gummy fish into the cupcake, tails first to resemble feathers.
